Christmas Eve! Time to Load the Truck and Head over the Hill to Grammie’s House! Oh, but first we better finish wrapping presents, baking sugar cookies, cleaning up the house for Santa, and cooking! Going to be a busy day, but my Four Legged Helpers were up early (even Rufus) and ready to go! And then they found out we aren’t going to Grammie’s house until later in the day so they are back in bed being dramatic! From the looks on their faces you would think they have the saddest life…poor Rescue puppies!
Rufus “helped” make the Ham & Horseradish dip last night. One of the other dogs lured me from the kitchen and Rufus helped himself to the leftover ham. The good news–I had already pulled the ham that I needed for the recipe. The bad news–The leftover ham was my dinner. Rufus is about 25% beagle and I should have known to never trust a Beagle in a Kitchen! He didn’t even feel bad about it.
This dip is always a crowd favorite and so quick to put together. I will tell you it doesn’t look the most appealing in a bowl and then people try it and go nuts! No matter where I take it the bowl is always empty at the end of the night. I had a friend that when people would ask about the dip would say “You won’t like it” so that he could eat it all!
8 oz Cream Cheese (let sit out for about an hour to soften–not near Rufus)
1/2 Cup Mayo
1/3 Cup Horseradish Sauce (Kraft or B&L)
1 Cup Finely Chopped Ham
1 Cup Finely Chopped Green Pepper
1/4 Cup Chopped Onion
Combine Cream Cheese, Mayo, and Horseradish Sauce. Mix until well blended. Add Ham, Pepper, and Onion to combine. Chill for at least 2 hours or overnight before serving. Great with Crackers or you can purchase the Filo Cups and stuff the dip in the cups for a “fancy appetizer.”
With 3 dogs Fancy went out the window…we will be eating the dip with crackers tonight!
