Riley is curled up on the couch waiting to taste test! The Macy’s Day Parade is on so we are of course enjoying coffee in my Macy’s Mug! Earlier this year I celebrated my mom’s 60th birthday in New York City and treated myself to this awesome mug! As the Four Legged and I are typing the Rockettes are dancing…Can’t think of a better way to start the Day!
Everyone was up early today to start cooking. I am never short helpers in the kitchen! Rufus was disappointed to find out that we are not in charge of the turkey. Cranberries, Yams, and Cornbread are not as exciting! I am trying a new recipe this year—a No Bake Pumpkin Cheesecake. After filling the crust we each took a small taste from the bowl and it seems to have made up for the fact that the turkey is at Grammie’s house!
I can’t help, but remember my senior year at college when cooking cranberries. Prior to this time I had only had cranberries out of the Ocean Spray can. My roommate and I were at Sam’s Club and bought a huge bag of cranberries because we were hungry and thought we could snack on them on the way back home. We did not realize that you could not eat cranberries raw and had a 5 pound bag in the fridge for weeks. To our young blog readers we didn’t have the internet on our phones so I had to go to the library and find a Martha Stewart magazine that featured recipes for cranberries. I fell in love with the fresh cranberries and have been making them ever since.
While making the cranberries I was a little over zealous with the stirring and a cranberry went flying. Rufus was hot on its trail and was not happy when he ate it. I tried to tell him it would be too tart as I had not added the orange or sugar, but he learned the hard way and had the funniest face as he tried to get the flavor out of his mouth. We need to get some turkey in him fast or he is not going to be a Thanksgiving fan for long!
In a few hours we will head over the river (creek) and through the woods (past the one pine tree) to Grammie and Big Ed’s house! This is Bailey and Rufus’ first Turkey Day and their brother Riley has them EXCITED! Have a Happy Thanksgiving!
Four Legged Approved No Bake Pumpkin Cheesecake
8oz cream cheese, softened
1 cup of canned pumpkin
½ cup white sugar
½ teaspoon pumpkin pie spice
8oz whipped topping, thawed
1 graham cracker crust (store bought or homemade)
Beat cream cheese, pumpkin, sugar, and pumpkin pie spice with mixer until well blended. Gently stir in about 2 ½ cups of whipped topping. Spoon mixture into crust. Place in fridge to firm up for 3 hours or overnight. Get a plastic spoon and let the Four Legged have a small taste of the mixture that was left on the mixer beaters.
When Serving Cut pie into slices and serve with a spoonful of remaining whipped topping.
