I am never short helpers in the kitchen! Last night was “make your own Pizza night” and we created BBQ Chicken Pizzas. Riley and Rufus take turns eyeballing me and nudging me just in case I have forgotten they are in the kitchen. You have to be careful when grabbing ingredients from the fridge as Rufus likes to take a peek and if you are not fast he can grab snacks off the shelves! As soon as I grab the cheese grater I suddenly have 3 best friends and they of course have to taste just a little bit to make sure it is good for the pizza! The pizza was a hit! #ThoseFaces
If you want to give it a try here is our “secret recipe”
Four Legged BBQ Chicken Pizza
1 Billy’s Pizza Crust (or your favorite)
½ Cup of BBQ Sauce
½ Red Onion Diced
1 Cup Mushrooms Sliced
1 Large Chicken Breast (about 6 to 8 ounces)
4 ounces Mozzarella Cheese
4 ounces Muenster Cheer
Garlic Powder to taste
Preheat oven to 400. Place chicken on baking sheet. Season with garlic and pepper. Roast for 30 minutes or until done. There should be no pink. Be careful when removing from the oven as Rufus will try to take the chicken off the baking sheet!
While chicken is cooking dice red onion, slice mushrooms, and grate cheese. (never use packaged grated cheese…you don’t want to know what they do to the cheese in order to sell it to you) Spread BBQ sauce on Pizza Crust leaving half an inch around the edges unsauced. Cover pizza crust with onions and mushrooms. Remove chicken from oven and cut into small pieces. Jack up the oven temperature to 425 degrees. Cover pizza with mixture of both cheeses. Sprinkle garlic powder lightly on top of pizza.
Place pizza directly on rack in center of oven. Cook 4 to 7 minutes. Bottom of crust should be golden brown and cheese hot and bubbly.
Remove from oven and let stand for 1 minute before slicing.
If sharing with the Four Legged leave the onions and garlic powder off of the pizza! #Rescue #BBQPizza
